It is such a pleasure to live in Lanzarote, one of the Canary Islands, and we should always try to take advantage of any opportunity we have to enjoy the local customs and culinary arts of the places in which we live. This is part of the culture and as we always say, it is our passion!!
So, we would like to share the most typical recipe that we can find in our islands with you, the mojo, the sauce that we always find with our delicious “papas arrugadas” (not “papas arrugás” as they are called in other parts of Spain), but also in many other dishes.
Canarian Red mojo and Canarian Green mojo
The two distinct sauces of red mojo and green mojo can be used with all kinds of meats, fish, vegetables, gofio, potatoes, etc …
The mojos are picant sauces, mainly red, that we can make ourselves, originating from and having a long tradition here in the Canary Islands.
So here we’ll reveal homemade recipes for Canarian red and Canarian green mojo sauces for you to try and we hope you will like them.

Canarian Red Mojo
Ingredients:
– 3 red peppers
– 2 garlic cloves
– 2 chilli peppers
– A little cumin
– Black pepper
– 4 tablespoons of vinegar
– 3 tablespoons oil
Canarian Green Mojo
Ingredients:
– 3 green peppers
– 2 garlic cloves
– 2 chilli peppers
– Parsley
– A little cumin
– A few balls of green pepper
– 4 tablespoons of vinegar
– 3 tablespoons olive oil
Preparation for both sauces:
Put all the ingredients into a mortar and crush or grind them with a pestle until a somewhat thick paste is formed. You can vary the amount of spices, oil and vinegar to suit your taste.
